Different types of piadina Two are the main types of piadina, the Cesena piadina and the Rimini piadina (also called “sfogliata”). In some areas, piadina is prepared without yeast, in others lard is replaced with oil, in some cases milk is added. The Cesena piadina has a thickness of about a quarter inch. Smoother and softer, it comes from north of the Romagna and inland. Its ingredients are water, flour, yeast, salt and pork lard. The piadina from Rimini, also called “sfogliata”, is much thinner. Its name comes from Rimini, the city overlooking the Adriatic sea where Federico Fellini - the most famous Italian film director - was born. In fact, it is typical of this town and of the other coastal cities in the south of the region. It is made in this way so that it can be folded more easily and even make delicious wraps.
